These lovely pearls deliver the rich earthy flavor of a truffle, but serve the visual elegance of fresh caviar! Made with 98% pure black winter truffle juice (Tuber melanosporum vita , aka Perigord truffles) these pearls are colored with natural squid ink to achieve that dark, luxurious color. It would be easier to list where these magical little pearls are not appropriate, but be sure to try them on eggs, risottos, red meats and fish; or in champagne.
