Black truffles are the most versatile of all truffle varieties. They can be cooked or raw. They go with practically everything, including the standard mild bases such as pasta, potatoes, and eggs; meats such as beef, lamb, and big game; all poultry such as chicken, duck, quail, pheasant; seafood such as scallops, lobster, Chilean sea bass, halibut and salmon. Black truffles are also great with beets, squash, and other hearty vegetables. As with all truffles, cheese, butter, cream and/or animal fat will soak up and enhance the truffle flavor.
