Smoked Salmon and Arugula Sandwich with a Truffle Vinaigrette

Simple yet elegant sandwich, perfect for a Mother’s Day High Tea.

Ingredients:

Sandwich:

1 loaf ciabatta bread

1 package Smoked salmon

Bag of Arugula

Salt and Pepper

Truffle Vinaigrette:

1 tbsp. olive oil

3 tsp Black Truffle Oil

3 tsp champagne vinegar

Salt & Pepper

1 tsp minced shallot  

1 tsp Lemon juice

1 tsp Dijon mustard

 

Instructions: 

-Cut Ciabatta bread length wise down the middle.

- In a mixing bowl combine all ingredients for Truffle Vinaigrette

- (optional) spread a small layer of cream cheese on bottom half of loaf.

-Layer smoke salmon on top of the bottom slice of Ciabatta.

-In another mixing bowl place a few handfuls of arugula and dress with truffle vinaigrette, salt and pepper. Start off with a little dressing and work up to amount needed.

-Spread handfuls of arugula salad on top of smoke salmon and place the top portion of ciabatta on top of sandwich.

-Cut into individual size portions, and serve.
