Mushroom and Truffle Pizza topped with a Shaved Asparagus Salad

2 cups chopped mushrooms
1 pizza dough
½ cup grated of each cheese: mozzarella, truffle cheese, and parmesan
Handful of Asparagus
3 tsp Truffle Oil
Preheat oven to 450. While oven is heating chop up mushrooms and sauté until caramelized. Shred all cheeses needed. Roll out pizza dough and cover with a layer of mozzarella. Sprinkle sautéed mushrooms over mozzarella and then layer with truffle cheese. Cook for about 10 mins. While pizza is cooking thinly shave asparagus into strips (if you find shaving them to tedious you can slice them thin as well). After 10 mins in the oven take the pizza out. Crack an egg in the center and sprinkle the shaved asparagus around the egg, sprinkle with half the Parmesan. Put back in the oven for 3-8 mins depending on your preferred liking of your egg. Once cooked to your liking take the pizza out, sprinkling the rest of the Parmesan cheese over and drizzle truffle oil over the top. Cut into slices and allow the yolk to run all over to extra rich flavor. Serve hot and enjoy!
