Grilled flatbread with Arugula, Fontina, and shaved Summer Truffle

 

Looking for a decadent yet simple weeknight dinner, look no further.

 

Ingredients:

1 Flatbread or pizza dough

½ - 1 cup Fontina Cheese

1 cup Arugula

1 oz Summer Truffles

2 tsp Truffle Oil

Salt and Freshly Cracked Pepper

 

Instructions:

If using pizza dough roll out pizza and cook according to package, pulling it out to add toppings 20 mins before done. If using a flat bread: Heat oven to 350. Either grate or cut strips of the fontina cheese and lay out on flat bread. Place in oven for 15-20 mins until melted. Once Fontina is melted and the edges are brown, pull out the flatbread. Shave summer truffles over hot cheese. Top with a handful of arugula and drizzle with truffle oil. Sprinkle a dash of salt and a few generous turns of freshly cracked pepper. Slice flatbread and serve hot.
