Butter Poached Giant Maine Lobster Tail on top Saffron Linguine

Ingredients:

1 ½ sticks plus 1 tbsp Butter

2 Tbsp water

Pinch Saffron

 14-16oz Giant Maine Lobster

8oz fresh or boxed Linguine

1 ½ Tbsp flour

1/2 C White wine

1/3 C clam juice

¼ C whole milk

1/3 C Heavy Cream

2 Tbsp Tomato paste

2 Tbsp minced Shallots

Salt and Pepper to taste

 

                        

Instructions:

De-shell your lobster tail.

Boil a pot of salt water for linguine and cook till al dente

 Melt 1 Tbsp of butter over medium-low heat. Once the pan is hot, add minced shallots and a pinch of saffron that you have rubbed between your fingers. Sauté until the shallots begin to soften and the saffron becomes aromatic. Turn the pan up to medium heat and add the flour into the pan, stirring it into the butter. Cook for 1-2 minutes. Add the wine and cook for another 2 minutes stirring occasionally. Add the clam juice and tomato paste to the pan. Continue to stir and bring to a simmer. Once simmering, turn heat to low and cook for 10 minutes, while stirring on occasion.

While the sauce is simmering, add your linguine to the boiling water and cook according to package instructions using the lower recommended cooking time so that it is al dente. Cut 1 ½ sticks of butter into cubes. In a sauce pan that will fit your lobster, add the 2 tablespoons of water and let it come to a boil. Then, with a whisk, add one small cube of butter at a time while constantly whisking. Once it is melted, add another cube of butter until you have incorporated all the cubes of butter. Add the lobster tails and with a spoon continue to pour butter over lobster until it is cooked, about 7 mins

Add the whole milk and heavy cream to the pan and stir it into the sauce until smooth. Heat through, but don't allow the sauce to bubble. Remove from the heat. Add the linguine from the pot of boiling water into the pan with the sauce. Be sure to save some of the pasta water and add it to the dish as needed if the pasta appears dry. Fold in the fresh lobster meat or slice and lay on top of pasta. Bon Appetite!
