Black Truffle and Asiago Popover

Makes 4 Gigantic Popovers

Ingredients:

1 cup Flour

1 cup milk (at room temperature)

2 eggs (at room temperature)

½ oz black truffle

Pinch of Black Truffle Salt

8 Tbsp Asiago Cheese

2 Tbsp black truffle butter (optional)

 

Preheat oven to 400. Place your popover pan, or if you don’t have one you can you a large muffin/cupcake tray, in the oven and allow to warm with oven. Dice up the black truffle and cut the Asiago into small cubes, leave to the side to be used later. In a large bowl whisk milk and eggs together. Once combined, mix in flour and truffle salt. Add in black truffle pieces and mix until most of the lumps are gone. Pull tray out of the over and thoroughly grease (with butter or cooking spray) each cup in pan. Evenly divide up the batter into 4 of the cups. Filling almost to the top. Sprinkle in 2 tbsp. of diced Asiago cheese into each cup.  Bake for 30 mins. Or until popped over edges and slightly browned on top. Also insert a toothpick to see if anything sticks to it. Serve fresh out of the oven!! Optional: spread a ½ tbsp. of black truffle butter on top of each popover.
